Day 19: Chocolate Chip Cookies from Vegan for Everybody
For my veganniversary I decided to make some chocolate chip cookies in celebration. This recipe from Vegan for Everybody sounded amazing and did not disappoint. Here’s an article about how they developed the recipe. I wasn’t sure about the taste when I sampled the cookie dough. One of the great things about vegan cookies is that you can sample the dough without worrying about salmonella from raw eggs. The coconut oil and almond butter were pretty prominent and I thought it needed some salt (typical me). Once they were baked, I realized my concerns were unfounded. The addition of almond butter gave the cookies a richness that made them taste decadent and fancy. Texture was absolutely perfect, and the coconut oil did not add any overpowering coconut taste like is sometimes the case with coconut oil based baking. Much like the brownies from the same book, these are a 10/10 and will be made again!
