Day 18: Thai Baked Sweet Potatoes from Minimalist Baker's Everyday Cooking

Yesterday was my 4 year veganniversary, but I celebrated today because yesterday was real rough health-wise. Today I was feeling awesome in comparison and actually got a bunch of stuff done, including some fun cooking. This recipe is a keeper for sure. 10/10, everything I could ever want in a lunch. Baked sweet potato with crispy, spicy and sweet chickpeas plus a ridiculously tasty tahini sauce. Also, limes! I love limes. It was so delicious and I was so happy that I made the entire recipe so I can have leftovers later in the week. I’m excited to try other dishes from the cookbook since I’ve followed Minimalist Baker for a while and tried many recipes from the blog. This recipe isn’t on the blog but honestly the cookbook is worth it even if this is the only meal I ever make from it. Highly recommended!
