Day 17: Creamy Tomato-Basil Spaghetti from Chloe Flavor

I’ve been slowing down on my cooking challenge for the last week because I’ve been so sick and not able to muster the energy to do much of anything. Today was my first Remicade infusion, and I took the entire day off not knowing what to expect. It took just about 2 hours for me, and I had no immediate side effects other than some drowsiness throughout the day. I may write another post on this in detail later on.

I was up for a little bit of cooking tonight but not anything crazy or hard. I had some coconut milk left over from the peanut noodles earlier in the week, so this creamy tomato sauce from Chloe Flavor with coconut milk was a good fit. While coconut works really well with curries and many different dishes, I would never think to try it in a pasta sauce and suspected that it would be a weird flavor combination. Then again, I have said before that I always trust Chloe’s recipes will be great, so I put my doubts aside and gave it a try. The coconut flavor was not overly obvious, and it did compliment the tomato and basil nicely, adding a richness that made the sauce extra delicious. I served this over lentil spaghetti for some much needed protein. I enjoyed it and will make it again if I’m looking for a pasta sauce that’s a little bit different from the usual.
