Day 16: Peanutty Perfection Noodles from Chloe's Kitchen
I have been meaning to try this recipe for a long time, and today was the day. Much like the Oh She Glows 15-minute avocado pasta, these peanut noodles are fast, easy, and extremely delicious, and I’m sure they will become part of my regular rotation of meals. The sauce is really good and I could see it working well in a variety of dishes, especially over a bowl of rice and veggies. It’s definitely not the healthiest thing you can add to your food as it has a lot of fat, salt, and some added sugar, but it sure is tasty. The recipe calls for scallions and carrots, but instead I dry-fried (and kind of burnt) some tofu and added some steamed spinach since these are pretty safe foods for me right now.
