Day 15: Nuts About Hot Cocoa from Chloe's Vegan Desserts

My copy of Chloe’s Vegan Desserts immediately opens to the chocolate chip cookie recipe, and it’s obvious from looking at the crusty, water-damaged page that I’ve used the recipe countless times. I’ve probably tried 3 or 4 more of the recipes as well, all with great success. Chloe Coscarelli’s recipes have not let me down yet, and she’s the first author I recommend when people ask me about vegan cookbooks. Her recipes are accessible, easy to follow, and satisfying for both vegans and non-vegans.

As I mentioned a few posts ago, I’ve been pretty sick for the last few days, and today I was extremely tired. The idea of cooking an elaborate dinner or really anything that would take more than 15 minutes was unappealing to me. Hot chocolate, however, sounded very appealing as usual. This has to be the quickest recipe in the book. You literally just put everything in the pan and let it melt, then you drink it. Essentially this is an excuse to drink hot fudge, which I’ve often been tempted to do but felt that I might be shamed by society if anyone should find out. As if drinking half a chocolate bar were not indulgent enough, there’s almond butter added to this hot chocolate for extra richness. Looking at the ingredients, there’s just no way this could possibly taste bad, and as expected it was totally delicious, like drinking a molten candy bar (because that’s basically what I was doing). I topped it with some almond milk Reddi-Wip and enjoyed it as I watched trashy TV for the next 2 hours. It’s that kind of day (week?).
