Day 20: Chocolate Chip Pumpkin Bread from Chocolate Covered Katie

You’ll notice there’s no photo. It’s because I messed this up and didn’t want my sad, sad, pumpkin bread to misrepresent the Chocolate Covered Katie cookbook.

I’m not sure where I went wrong but I’m sure it was user error, because Katie Higgins’ recipes are always great. I will say that the pumpkin bread tasted fantastic. The issue was it didn’t rise like…at all. The recipe description says it makes a light and fluffy bread, but this was super dense and flat. Flavors were perfect and I ate it anyway. I would give it another shot and take my time. I was rushing and probably either left out an important ingredient or did something wrong in the process.

There are tons of great recipes in this book and I highly recommend it! My favorite is the Chocolate Infinity Pie. There’s a variation on it here on Katie’s amazing blog.
