Fruity Curry Chickpea Salad
Inspired by a couple of different chicken salad recipes from allrecipes.com, this fruity curry chickpea salad is great in a sandwich or as a side dish. Fruit, curry powder, and mayo may seem like an odd flavor combination, but trust me - it works!
Fruity Curry Chickpea Salad
serves 4-6
ingredients
1 15-oz can of chickpeas, drained and rinsed
3 tbsp vegan mayo
1 tsp curry
1/4 tsp salt
1/4 tsp pepper
1 celery stalk, finely chopped
1/4 c chopped walnuts
3 green onions, thinly sliced (or cut with scissors)
1 small apple, chopped into bite-sized pieces
3/4 c grapes, halved
juice of half a lime
method
Mash the chickpeas. The texture can be varied with some pieces still whole and some mashed and flaky.
Mix the mayo, curry, salt, and pepper with the chickpeas until evenly distributed.
Add the celery, walnuts, green onions, apple, grapes, and lime juice until well combined.
For best results, let it sit in the fridge for a few hours or overnight, allowing the flavors to come together.
