Day 11: Quick Sweet Potato Soup from Everyday Happy Herbivore
The name of this soup did not lie - it really was quick! It came together in under 10 minutes and only used a few ingredients - sweet potato, veggie broth, garlic, and ginger plus some salt and pepper. I added some red pepper flakes and turmeric, but it was still lacking something. I also needed to thin it out as it was extremely thick after pureeing everything. It was a nice and filling lunch with a piece of toast, and I would attempt it again with modifications - maybe some non-dairy milk to add some creaminess or trying it with some curry paste for a more interesting flavor.
I’m noticing that the Happy Herbivore recipes I’ve tried have seemed like they are under-seasoned overall, but with some minor changes they could be really good. This might have something to do with the low-fat and low-calorie aspect; a little bit of salt and fat would help the taste immensely, though I appreciate what she is trying to do for those who are trying to maintain a lower fat diet for whatever reason. I do like how accessible and easy these recipes are. They are realistic for everyday meals and use ingredients that are probably already in your kitchen.
