Day 9: Black Bean Burger from Vegan for Everybody
Vegan for Everybody by America’s Test Kitchen is full of thoroughly tested, amazing looking vegan recipes. It was difficult to narrow it down to just one to try for today, but I settled on the black bean burger.
These were extremely soft after pan-frying as directed which was surprising because the description specifically mentions that they have been tested to make sure they’re not mushy like black bean burgers can often be. I’m sure this was my fault. I had no scallions, so I used a little bit of onion to substitute which I think added some excess moisture. Maybe I should have dried the beans even more as well. Next time I’ll make sure to follow the recipe exactly and probably pat the beans dry with paper towel in addition to letting them dry for 15 minutes. I’ll also add more crushed tortilla chips or flour if the consistency is too sticky after mixing everything together.
The burger was perfectly seasoned and had an excellent flavor overall. I topped it with some salsa, guacamole, spinach, and some sautéed mushrooms with lime juice. I would definitely make these again, but don’t think they will replace my favorite black bean burger from allrecipes.com.
