Day 6: Dan Dan Noodles from Thug Kitchen 101

Today I learned that Dan Dan Noodles are a famous Chinese street food consisting of egg noodles, minced pork, and greens in spicy broth, sometimes with the addition of sesame paste, especially in American Chinese cuisine. The Thug Kitchen 101 recipe uses udon noodles, bok choy, tempeh, and tahini to create a tasty vegan version of this very non-vegan dish.

Since today was a busier day for me, I decided to sub out some ingredients for what I had already in my kitchen. I used rice noodles and spinach in place of udon noodles and bok choy, so I’m not sure you could even call what I made Dan Dan Noodles at all. Having never tried any version of this dish, though, my modified version did not disappoint. I added a bit more sweetener to the sesame sauce to balance out the heat and salt and topped it all with some cashews and sriracha, and a little bit of lime juice. Overall it took 15-20 minutes to make and was well worth the time and effort.
